PURPOSE:To prepare frozen TEMPURA (deep-fat fried food) giving the appearance and palatability of just-fried TEMPURA by thawing without forming viscid texture, by applying a granular coating material to a coated TEMPURA ingredient at the moment when the ingredient floats on the high-temperature oil. CONSTITUTION:A coating material is prepared by dissolving wheat flour optionally containing a small amount of baking powder in water. A TEMPURA ingredient is coated with said coating material and dipped in hot TEMPURA oil of about 180 deg.C. When the TEMPURA ingredient is floated on the oil, the above coating material is scattered or directly applied to the surface of the TEMPURA ingredient without delay, whereby relatively small numerous protrusions of about 2mm diameter are formed on the surface. The treated TEMPURA ingredient is fried again in a TEMPURA oil and quickly frozen. |
