PURPOSE:To provide an O/W-type antioxidant for immersion, composed of an oil phase containing an oil-soluble antioxidant, an oil-soluble emulsifier and ethanol and a water phase containing a sugar, having heat-stability and exhibiting excellent migration property to the object in water. CONSTITUTION:The objective antioxidant is composed of (A) an oil phase containing (i) an oil-soluble antioxidant (preferably purified tocopherol, etc., obtained by molecular distillation or ion exchange resin treatment), (ii) an oil- soluble emulsifier (preferably lecithin, a polyglycerol fatty acid ester having an HLB of <=7, etc.) and (iii) ethanol and (B) a water phase containing a sugar (preferably sorbitol, etc.). USE:Foods such as boiled and dried sardine, frozen food, ham sausage, retort food, instant food, etc., rubber, synthetic resin, pigments, dye, etc.
