The invention relates to an electric knife intended in particular for opening oysters, comprising a casing 1, a blade 2 capable of sliding in its longitudinal direction F between an extended position with respect to the casing and a retracted position with respect to the casing, an electromagnet 7, 8 mounted in the casing and arranged in order to make the blade vibrate between its two positions, and elastic means 9 tending to bring the blade back into its extended position.
