PURPOSE:To produce tannase in good yield, by cultivating a microorganism, belonging to the genus Aspergillus and having the ability to produce tannase in a specific culture medium. CONSTITUTION:A microorganism, e.g. Aspergillus oryzae IFO 4206, belonging to the genus Aspergillus and having the ability to produce tannase us inoculated into a culture medium containing >=0.5% (wt./vol.) polar solvent extract of a tannin-containing plant body and, as necessary, >=0.02mg/l Zn ions and prepared by removing or reducing other metallic ions or converting the metallic ions as a complex and cultivated at 5.5-2.5pH and 20-40 deg.C for >=2 days to accumulate tannase in the resultant culture. Solid substances in the culture are then removed and an alcohol, acetone, etc., is added to fractionate the culture. The collected precipitates are further dialyzed against water. |
