In order to prolong the life of an egg product, such as egg yolk, egg white, yolk and white together or a mixture of such products with other ingredients, the product is subjected to a vacuum treatment before, during, or after pasteurisation. In a specific embodiment (Figure 2) the product is supplied through a pipe M to two containers 15 provided with covers 16. The containers 15 are used alternately to treat successive quantities of the product. After supply of a quantity of the product to one of the containers 15, air is withdrawn from the container through pipe 28 connected to a pump, causing the expulsion of a gaseous mixture of air and other gases from the product, and at the same time a stirrer blade 20 is rotated continuously within the container 15 by means of a motor 18. Subsequently carbon dioxide is introduced into the container through a pipe 34 in order to restore the pressure in the container 15, and the product is subsequently expelled from the container through a pipe N towards a packing station. Alternative devices are described, together with apparatus for UV irradiation of the product. <IMAGE>
