摘要 PURPOSE:To obtain excellent cooked rice having definite taste and free from scorch, in a short time without necessitating preparatory immersion of rice in water, by heating rice and a specific amount of water in a rice cooker terminating the heating when the rice begins to move in the water by the convection and boiling of water and maintaining the rice at a specific temperature for a specific time. CONSTITUTION:Washed rice is put into a rice cooker together with a prescribed amount of water and heated. When the rice begins to move in the water by convection and boiling of the water, the heating is stopped and the rice is maintained at about 100 deg.C for 20-40min to obtain the objective cooked rice.
