<p>A fermenting tank (13) for wine is controlled by maintaining a constant Baume and yeast concentration by a computer which interconnects sensors (41, 42, 44, 45) with charging and discharging pumps (51, 46). Yeast propagation is usually not constant but occurs in cycles, but with this invention the charging pump (51) will charge grape juice into the tank (13), and the discharging pump (46) will discharge partly fermented grape juice from the tank. Immediately upon onset of increase in yeast cell count, the pumps (51, 46) increase their speed and thereby maintain the yeast cell and Baume variation within a very small range.</p> |
