DNA CHAIN CODING ALPHA-ACETOLACTIC ACID DECARBOXYLASE AND YEAST TRANSFORMED BY SAID DNA CHAIN

摘要

PURPOSE:To suppress formation of alpha-acetolactic acid and obtain SAKE without unpleasant smell emitted by diacetyl converted therefrom, by using a yeast transformed by a DNA chain having a specific base sequence for brewing SAKE. CONSTITUTION:A yeast is transformed by a DNA chain having alpha-acetolactic acid decarboxylase activity and a base sequence coding a polypeptide shown in the figure is transformed. A yeast belonging to Saccharomyces cerevisiae is preferred for the yeast. The transformation is preferably carried out through a plasmid.
