The present invention relates to modified emulsifiers particularly but not exclusively for foods and beverages. In accordance with the present invention there is provided an emulsifier having at least one ionisable chemical group therein, such that in an aqueous solution the emulsifier carries a charge of one sign, characterised in that the emulsifier has been modified by the binding thereto of a polysaccharide stabiliser having at least one ionisable chemical group therein, such that in an aqueous solution the stabiliser carries a charge of the opposite sign. It has been found that the method of formation of the modified stabiliser can be critical since some interactions appear not to extend across lipid/water interfaces. Furthermore the presence of salts and acid components can adversely affect the formation of the modified stabilisers. Thus these components should generally be added later. The modified emulsifiers is useful as, or in, foods and beverages, and also industrially for example in drilling mud compositions. |
