PRODUCTION OF SAKE USING KAOLIANG AS RAW MATERIAL

PURPOSE:To make it possible to efficiently use unutilized resources, reduce cost, save labor and obtain the titled SAKE, class OTSU (low-class distilled spirit produced by using a primitive distilattion apparatus, e.g. pot still, etc.), etc., by heating and pressurizing sorghum under specific condition, releasing the resultant sorghum to ordinary pressure, pulverizing the sorghum and using the resultant pulverized sorghum as a raw material. CONSTITUTION:Sorghum in a granular state is heated and pressurized at 190-200 deg.C under 6kg/cm<2> pressure for 10-15min, rapidly released to ordinary pressure and pulverized or the sorghum is preferably pulverized, sent under pressure while kneading in a heated condition, extruded to ordinary pressure and cut. The resultant sorghum is used as part or all of the raw material to afford the aimed liquor.
