PURPOSE:To obtain a modified globin protein soluble or emulsifiable in water and aqueous solution of inorganic salt even in neutral range and useful as a food or surfactant, etc., by succinylating a globin protein originated from animal blood. CONSTITUTION:The objective modified globin protein can be produced by introducing a succinyl group to primary amine, secondary amine, hydroxyl or thiol group of a globin protein. For example, a globin protein is suspended in water at a concentration of preferably 1-5wt% and the suspension is adjusted to >=11 pH with an alkali metal or alkaline earth metal hydroxide. The suspension is added with a solution produced by dissolving succinic anhydride in a lower alcohol to saturated state and is made to react with each other usually at room temperature for <=1hr. The amount of the succinic anhydride solution is usually 0.5-1wt% based on the globin protein.
