The invention relates to a stabilised, pasteurised edible herb composition which contains one or more edible herbs in particulate form and an edible oil as lubricant in order to impart a paste consistency thereto. According to the invention, the composition contains approximately 2% to approximately 7.5% by weight of an edible salt in order to reduce the enzyme activity of the herbs and in order to impart stability and preservation of the flavour and one or more edible acids. The invention applies particularly to the preservation of fines herbes. |
