PURPOSE:To produce the title gelatin having improved water solubility, by coating the surfaces of gelatin particles with water-soluble gelatin. CONSTITUTION:The surfaces of gelatin particles of a viscosity <=20mP, obtained by hydrolyzing gelatin or a material therefor with an acid, an alkali, a proteolytic enzyme or the like, are sprayed and coated with a water-soluble gelatin solution of a viscosity <=12mP to obtain gelatin of improved water solubility and a water content >=6.3%. |
