PURPOSE:To desalt and to sterilize a raw material pickled with salt simultaneously in a short time and efficiently and to obtain a crisp product free from change in color inexpensively, by putting the raw material pickled with salt in a specific rotary drum, transferring a spiral blade horizontally by changed rotation and feeding steam to the drum. CONSTITUTION:An opening and shutting door 7 of a cylindrical rotary drum 3 in a water tank 1 having an open top is slid in a shaft direction, an outlet 3b also used as an inlet is opened, a raw material pickled with salt such as pickles, daily dish, etc., is put in the drum, the door 7 is closed, water and steam are fed to an ejector 15, blended, introduced to a hollow inside part 4b of a central shaft 4, jetted from a great number of through holes 4c to interior of the drum 3 to form hot water. The hot water is made to flow from a great number of small holes 3a at an outer peripheral wall of the drum 3 to interior of the tank 1. Then, a reduction motor 11 is operated to revolve the drum 3, revolution directions are changed at proper time intervals, the raw material pickled with salt is alternately transferred to the right and left through a spiral blade 6, uniformly dispersed and circulated and desalting and sterilization are carried out. Then, an on-off valve 22 at a left lower part of the tank 1 is opened, the hot water is released to the outside, the door 7 and a bottom 20 of the tank 1 are opened and the drum 3 is rotated in such a way that the raw material pickled with salt is transferred to the left and discharged. |
