PURPOSE:To obtain an animal meat-like food which shows a raw animal meat- like color before heat treatment and has the same fading and change as those of raw animal meat by heat treatment, by coloring an animal meat-like food with a specific dyestuff. CONSTITUTION:An animal meat-like food such as fish met sausage, ham, etc., is colored with a red natural dyestuff of betacyanin type such as beet red dyestuff, batanin dyestuff and/or red natural dyestuff of anthocyanin type such as hibiscus dyestuff, red cabbage dyestuff, etc., so that the animal meat-like food usually has color in range of 20-50 L*, 15-50 a* and 2-30 b* shown by sensory chromaticity. |
