The process consists of (1) reducing the size of the raw material; (2) treating with an alkaline agent at 25-55 deg.C and pH 7.5-13.5 under 1-10 atmos. for 1 hour; (3) separating the solid; (4) filtering and adjusting to ptt 1-6; (5) aerobic fermentation in a continuous reactor; (6) centrifuging to obtain a first protein matt., and recycling the liquid; (7) drying the protein material to 20% moisture content; (8) aerobic fermentation of the solid from (3) in a discontinuous reactor; (9) filtering the suspension to obtain a second protein material; and (10) drying.
