A fermentation device comprises at least one vertical fermentation vessel having a substantially constant cross-section, means for supplying the lower part of said vessel with juice to be fermented and means for evacuating the fermented juice at the upper part. The supply of the fermentation vessel (2) is effected over its entire cross-section and the inside of said vessel is free of any body which could modify the flow of juice during fermentation. |
