PURPOSE:To produce high-quality ground fish in high yield from fishes or fishes and shellfishes which can not be processed into ground fish by a conventional procedure, by grinding fishes or fish meat in water, filtering, centrifuging, adjusting ionic strength, etc. CONSTITUTION:Fishes or fish meat is ground with 1-10 times as much as water containing 0.3-3,000mug/ml and/or 1-1,000muM chelating agent such as EDTA, phytic acid, etc., and ionic strength adjusted to 0.01-0.10. Then, the prepared ground material is filtered, unground materials such as small bones, skin, pieces of internal organs, etc., are removed, the prepared liquid phase is centrifuged at >=2,000G to give ground fish having 80-90wt% water content. The ground fish is optionally blended with animal protein such as cow's milk, glair, etc., or a vegetable component such as plant extract, maltol, etc., or sugar or sugaralcohol. |
