PURPOSE:To obtain a fermented soybeans having good taste from which an offensive smell is completely removed, by putting boiled or steamed soybeans inoculated with Bacillus natto in a specific PSP container tray, sealing it with an air permeable, waterproof film, inverting the container tray and fermenting the soybeans. CONSTITUTION:Steamed or boiled soybean 3 inoculated with Bacillus natto are piled on a PSP container tray 1 having a great number of needle holes 1a bored in the vertical direction at the upper position of special side, an air permeable, waterproof film 4 obtained by laminating porous synthetic resin film to the under surface of paper is bonded to the top of the PSP container tray 1, the PSP container tray 1 is inverted and the soybeans are fermented, to give the aimed fermented soybeans. |
