PURPOSE:To obtain a protein food rich in fibrous structure and having excellent moldability, by kneading a raw material composed mainly of vegetable protein with water under high temperature and pressure using a twin-screw extruder and extruding the kneaded mixture from a tip die along almost circumferential direction in the form of a sheet. CONSTITUTION:The objective protein food can be produced by kneading a raw material composed mainly of vegetable protein (e.g. soybean, wheat, etc.) with water under high temperature and pressure using a twin-screw extruder and extruding the kneaded mixture from a tip die along almost circumferential direction in the form of a sheet.
