PURPOSE:To obtain a food having improved color and luster, fragrance, flavor, etc., and a masticating feeling simply and continuously, by using pigskin produced in slaughtering and carcass dressing processes of pig as a main raw material, kneading, heating, pressurizing and extruding it from a die by the use of an extruder. CONSTITUTION:Subcutaneous fat, fur etc., are removed from pigskin produced in slaughtering and carcass dressing processes of pig, the pigskin is immersed in water, steamed and thinly cut. Then, the thinly cut pigskin as a main raw material is fed to an extruder and, if necessary, further additives such as a coloring matter, seasoning, spice, etc., are fed to it. Then, the raw material is kneaded, heated, pressurized and extruded from a die to give the aimed food having a masticating feeling. The food is preferably used as a jellyfish-like food in salad, Chinese food, etc. Consequently, pigskin which has been used only for leather processing, feed, etc., can be open to use of food. |
