Method for detecting an anisotropy, such as a rolling mill texture in a steel sheet, characterised in that it consists in applying a transverse ultrasound wave to the metal sheet, normal to the surface of the metal sheet, and polarised in a plane making an angle between 15 and 75 DEG , and preferably equal to 45 DEG , with the direction of rolling, in picking up the reemitted wave and in deducing from the configuration of this wave whether or not the metal sheet has a texture, the criterion being that the wave picked up has a peak when the metal sheet is isotropic and two peaks shifted in time in the case of an isotropic texture. The invention in particular allows optimisation of the trimming of the ends of metal plates at the end of rolling. <IMAGE>
