PURPOSE:To produce a cellulosic substance stably, rapidly and efficiently, by carrying out culture in a culture tank of a bubble column type while introducing air into the bubble column and controlling pH of a culture solution in a specific range. CONSTITUTION:A bacterium [Acetobacter aceti subsp. xylinum ATCC10821, etc.,] belonging to the genus Acetobacter, capable of producing a cellulosic substance, is inoculated through a liquid medium into a culture tank of bubble column type. Culture is carried out while introducing air into the bubble column and controlling pH of a culture solution at 3.0-6.0, preferably 4-5. The cellulosic substance is formed in a pellet state and collected by a settling, separating tank, strainer, etc. |
