PURPOSE:To obtain a processed meat-like food having excellent palatablity, taste, flavor, etc., by pressing and dehydrating a bean curd, crushing the curd to the size of soybean grain, frying in an oil, mixing with finely chopped and fried vegetables and bread crumb, kneading and forming the mixture and heat- treating the formed product. CONSTITUTION:Bean curd is pressed and dehydrated to a water-content of 80-70% crushed to the size of soybean grain and fried in an oil. The fried bean curd is added with less than equal amount of finely chopped and fried vegetables (e.g. onion, carrot, etc.). A proper amount of bread crumb is added thereto and the obtained mixture is kneaded, formed to a desired form and heated either by frying in an oil, baking or steaming to effect the thermal denaturation of soybean protein. If necessary, the product is packaged in a heat-resistant bag, vacuum-packaged together with sauce and sterilized with hot water to obtain a processed meat-like food similar to hamburger steak or meat ball. |
