The present invention relates to a heat exchanger characterised in that it consists of two concentric tubes of small diameter, made of thin flexible plastic and in that the refrigerating or heating fluid flows in the casing, the inner tube being pressurised by water or air. It also relates to a device for cooling or heating thickened liquid, characterised in that this heat exchanger, immersed in the liquid, is linked to a cold or hot water producing plant, this water acting as the refrigerating or heating fluid. It finally relates to a device for adjusting the wine fermentation temperature characterised in that this exchanger placed inside the vat is linked to a plant using the reversibility of a refrigerating circuit and to a temperature-adjusting loop.
