<p>Apparatus for alcoholic fermentation of sugar-containing liquids by means of flocculated yeasts, characterised in that it consists of a two-stage fermenter: a fermentation stage (4) and a separation stage (5) situated above the fermentation stage, in that each stage is equipped with packing (6, 9), in that a baffle (13) is placed between the stages and in that the separation stage has a diameter equal to or greater than the fermentation stage; also, a process of fermentation by means of flocculated yeasts, employing the device described above. <IMAGE></p> |
