PURPOSE:To produce a soya milk essentially free from trypsin inhibitor and the grassy smell of soybean, by treating soybean under a specific temperature condition. CONSTITUTION:Whole soybeans, skinned soybeans or their soaked product is crushed in a hot aqueous medium at >=85 deg.C and the obtained crushed slurry is maintained in a hot aqueous medium at >=85 deg.C, preferably 85-90 deg.C for about 30sec-2min. The slurry is ground, the bean curd refuse is separated and the filtrate is thermally sterilized by indirect heating process with a plate-heater, tubular heater, etc., to inactivate trypsin inhibitor. |
