The present invention relates to a process for producing ethanol by the fermentation of sugar-containing media using yeasts, characterised in that at the start of the fermentation, the yeasts are immediately brought into contact with the whole of the sugar-containing medium to be fermented, and in that during the fermentation, the medium around the yeasts receives no supply of sugar up to completion of the fermentation when the yeasts are separated from the fermentation medium.
