The invention relates to an installation for implementing heat-winemaking of the grapes, either whole or after partial or total pressing. This installation comprises means 1 for receiving the harvested grapes, a heat-winemaking tank 18, and a microwave oven 7 adapted to bring the harvested grapes upstream of the tank to a temperature greater than 50 DEG C. This oven is equipped with means for regulating the electromagnetic energy irradiated and allows a rapid temperature rise to be produced in the harvested grapes. The installation imparts to the wines produced excellent aromatic qualities and eliminates any colour alteration in the latter. <IMAGE>
