PURPOSE:To utilize sea urchin juice which has been discarded as a useless thing and obtain a seasoning for cooked rice, by incorporating a specific liquid sea urchin soup containing sea urchin juice with a specific pasty sea urchin extract containing a sea urchin and sea urchin juice. CONSTITUTION:A seasoning for cooked rice obtained by mixing sea urchin with soy sauce, sweet SAKE, sugar nucleic acid, sodium succinate, alanine, sodium glutamate and glycine, heating the resultant mixture to dissolve the respective components and form a liquid sea urchin soup, mixing a sea urchin with an alcohol, sea urchin juice, vegetable protein and vegetable fat to form a pasty sea urchin extract on the other hand and incorporating the above- mentioned sea urchin soup with the pasty sea urchin extract. The liquid sea urchin soup and pasty sea urchin extract formed as described above are mixed with rice and together cooked at the same time, and nice cooked rice having the taste of the sea urchin and sea urchin juice permeated into the rice during cooking can be obtained. |
