The method uses the inductive effect of a blast air jet in order to carry along the outgoing air which is warm and/or loaded with harmful substances. An air nozzle is arranged in the effective vicinity of the heat and/or harmful substance development, e.g. a heat, water-vapour and/or grease-particle source and is directed towards an outgoing-air member. The blast air jet carries the outgoing air which is warm and/or loaded with harmful substances along and the entire outgoing-air jet thus created is carried off by the outgoing-air member. The blast air jet is adjustable and can consequently be adapted to the operating conditions. The blast air supply can take place from the main incoming-air fan, from the pressure side of the outgoing-air fan, from a separate blast air fan or from a compressed-air supply installation. The method makes possible a reduction in the necessary incoming-air and outgoing-air capacities and consequently in the investment and operating costs. It can be used above all in kitchen ventilation systems.
