NOVEL PROTEOLYTIC ENZYME AND PRODUCTION THEREOF

PURPOSE:A proteolytic enzyme which is an enzyme produced by lactic acid bacteria belonging to the genus Streptococcus, has characteristics of cleaving specifically Glu(glutamic acid)-X or Gln(glutamine)-X in the amino acid sequence and useful for position confirmation reagent of Glue and Gln and aging of cheese. CONSTITUTION:Microbial cells obtained by cultivating lactic acid bacterial belonging to the genus Streptococcus, particularly preferably Streptococcus cremoris are extracted to give a cell-free extract solution, which is the subjected to ion exchange chromatography (chromatofocusing) or gel filtration or combination thereof to separate the aimed proteolytic enzyme capable of specifically recognizing and cleaving Glu(glutamic acid)-X or Gln(glutamine)-X in proteins or peptides.
