PURPOSE: Process of making an undiluted solution of Jae-cheop soup is provided, which contains chitosan, improves tastes and function of the soup by removing sand produced from shellfish and all sort of floating mater. CONSTITUTION: Method for making an undiluted solution is prepared by cleaning Jae-cheop and removing sands from the shell by soaking in water for 8-10 hours; heating a mixture of the shellfish and refined water in a ratio of 10 to 1 at 100°C for 20-30 minutes; separating contents, shell of Jae-cheop and a solution. After leaving at room temperature for 4-5 hours, deposit and an undiluted solution of shellfish are separated. An undiluted solution of Jae-cheop soup is then produced by heating the solution with chitosan added in a ratio of 1250:1 and separating remaining deposit combined with chitosan. |
