FIELD: food industry.SUBSTANCE: invention relates to determination of quantity and quality of gluten in wheat grain. For this purpose, grain is milled to produce flour, with further sifting average sample through a sieve. Then, micro pictures of flour fine fraction of not less than 5,000 particles are taken by optical microscopic examination. Micro pictures are analysed automatically using software. For this purpose from centre of gravity of figure limited by contour particles flour, not less than 300 sections are lead to outline of particles in all directions, determining the arithmetic mean value of lengths of the resultant sections X (mcm) and coefficient of variation of length of resultant sections K (%). Quantity of gluten M(%) by formula M=0.24·K-0.30·X+41.86. Gluten quality L(units CDI) is determined by formula L=1.14·K-1.51·X+139.06, where X(mcm) is average values of X at measurement of not less than 5,000 grain particles, Kis average value to when measuring of not less than 5,000 grain particles.EFFECT: invention allows determining technological quality of wheat grains, wherein accuracy of determination of quantity and quality of gluten wheat grain increases.1 cl, 3 tbl, 3 ex |
