PURPOSE:To obtain the titled molding excellent in shape and edibility and useful as artificial rice having neither foreign taste nor foreign ordor, a material for instant foods, or a material for candies and cakes, by kneading and pressing a starch containing a specified amount of water and forming it into granules. CONSTITUTION:A starch of a water content of 32-43wt% (e.g., cornstarch) and, optionally, 10wt% or below (in terms of solids) binder, nutritive adjuvants such as protein, amino acid or vitamin, seasonings such as spices, perfumes, flavors or sugars, colorants and preservatives are kneaded and pressed to form a sheet having a content of an alpha starch of 40-80% and a density of 1.0-1.5g/cm<3>. This sheet is formed at 50 deg.C or below into granules by means of a roll granulator having a roll surface provided with hollows of a desired shape and, if desired, steamed and dried to a water content <=20wt%. |
