PURPOSE:To color pickles to bright red or purplish red with high safety and good preservation quality, by using a red dyestuff extracted from colored rice. CONSTITUTION:Pickles are colored to red or purplish red with a red dyestuff extracted from colored rice. Examples of the above-mentioned colored rice include purplish red rice produced in Thailand or Indonesia, red brown rice produced in the Philippines, SENPO No.1 native to China and purple rice plant in Japan, etc. The dyestuff contained in the colored rice is anthocyan based dyestuff, which is red - purplish red under acidic conditions, dark brown under neutral conditions and green under alkaline conditions. The colored rice is polished to separate only the bran part and dipped in water, hydrous ethanol or ethanol at room temperature or while heating to extract the dyestuff from the colored rice. The resultant extract is concentrated and used as a concentrate, paste or dried flour.
