<p>PURPOSE:To prevent decomposition of 5'-ribonucleotides with phosphatase and to improve seasoning effects, by adding the 5-ribonucleotides in a mixed state with polymerized phosphate and an edible organic acid when pickle is produced. CONSTITUTION:A seasoning composition for pickle having a composition consisting of 100pts.wt. 5'-ribonucleotides, 10-800pts.wt. (especially 10-200pts. wt.) polymerized phosphate, and 10-800pts.wt. (especially 10-200pts.wt. edible organic acid. Tripolyphosphate, tetrapolyphosphate, hexapolyphosphate, pyrophosphate, etc., are used as the polymerized phosphate, and acetic acid, citric acid, succinic acid, lactic acid, furamic acid, etc., are used as the edible organic acid.</p> |
