PURPOSE:To obtain SUSHI (vinegared rice or the like) consisting of a food ingredient capable of standing thawing after freezing and vinegared rice, capable of carrying out preservation for a long period and transportation to a remote place and preservation, having improved restoration properties, by subjecting SUSHI to vacuum packaging with a synthetic resin film, and rapidly freezing it to a specific temperature. CONSTITUTION:SUSHI (preferably rolled SUSHI or CHIRASHIZUSHI (vinegared rice topped with a lot of ingredients)) consisting of a food ingredient (preferably animal meat such as seasoned and cooked beef, etc.) standing thawing after freezing and vinegared rice is subjected to vacuum packaging with a synthetic resin film and rapidly frozen to <=-5 deg.C, preferably -30--40 deg.C. Prepared SUSHI has improved shelf stability, can be transported to a remote place, thawed and used when it is required (thawed preferably with hot steam). |
