PURPOSE:To obtain a polyalcohol fatty acid ester in high synthetic conversion, by treating a mixture of a specific polyalcohol and a fatty acid with a microbial alkaline lipase under dehydration without addition of water. CONSTITUTION:A mixture of a polyalcohol (propylene glycol, glycerol or polyglycerol) and a 2-22C saturated or unsaturated fatty acid (which may form an ester with a 1-3C alcohol) is treated with a microbial alkaline lipase under dehydration essentially without adding water to the system. A polyalcohol fatty acid ester can be produced in high synthetic conversion (esterification ratio) leaving little fatty acid used as a raw material.
