<p>PURPOSE:To obtain pickles of yam having a simple taste free from diastase and a harsh taste, by sterilizing peeled yams, immersing them in vinegar water and dipping them in salt water and dehydrating them. CONSTITUTION:Peeled yams are immersed in a dilution solution of a sterilizer for food additive and sterilized. The yams are then dipped in vinegar water for >=2hr and immersed in salt water for >=1hr. The yams are dehydrated and preserved with various kinds of seasoning (e.g., soy sauce, MISO, etc.) for several days.</p> |
