PURPOSE:To provide an acidic seasoning liquid resistant to discoloration even after the storage for a long period, by adding L-ascorbic acid or erythorbic acid or their Na salt to a seasoning liquid at specific ratios. CONSTITUTION:The objective acidic seasoning liquid can be produced by using L-ascorbic acid, erythorbic acid or their Na salt as a part of the raw material of an acidic seasoning liquid composed of vinegar, ketchup, sugar, salt, fresh water, tomato puree, gum, spice, soy, various extracts, chemical seasoning, etc., and adding the acid in the production of the seasoning liquid by conventional method in an amount of about 0.07-0.8wt% based on the whole raw material. Although the acidic seasoning liquid of the present invention has the color originated from the raw materials, however, the effect of the additive, i.e. the discoloration-preventing effect is remarkable in the colored seasoning liquid compared with the colorless seasoning liquid. |
