PURPOSE:To obtain a continuous fibrous meat product by extrusion molding by the use of a protein raw material, by setting a porous plate having a great number of plural kins of small holes having different crosssectional areas opened in the thickness direction in the direction perpendicular to the shaft to a screw at the inlet side. CONSTITUTION:The die 47 consisting of the screw 40, the torpedo 41, the barrel 42, etc., is provided with the orientation plate 46 having a great number of the plural kinds of the samll holes 45a, 45b, and 45c having different crosssectional areas in the thickness direction in the direction perpendicular to the shaft of the screw 40 at the inlet side. The protein raw material 50 is fed to the raw material feed part of the screw 40, compressed, blended and kneaded by the screw 40 and the barrel 42, the raw material 50 is made into a molten state, passed through the small holes 45a, 45b, and 45c of the orientation plate 46, the protein molecule of the raw material 50 is provided with shear force, orientated, molded by the molding part 52, to give the extruded product 53 having fibrous properties and tough meat tissue.
