摘要 The present invention relates to a process for producing a dealcoholised quality sparkling wine from matured quality sparkling wine by applying vacuum distillation known per se and impregnation known per se, and is characterised in that in a closed system and during only one operation, a matured quality sparkling wine is first separated from its carbon dioxide by spraying at 400-500 mm Hg and 10-15 DEG C for a short period, then dealcoholised at 80-120 mm Hg and 35-45 DEG C by gentle vacuum distillation and finally recombined with its carbon dioxide at 3.3-4.0 bar gauge pressure and 3-8 DEG C, the remaining alcohol content in the finished dealcoholised quality sparkling wine being less than 0.5 percent by volume, and to an apparatus for producing dealcoholised quality sparkling wine from matured quality sparkling wine, which apparatus is composed of a plurality of components known per se which are combined with a novel degassing chamber. <IMAGE>
