摘要 <p>PURPOSE:To make the quality of a food after thawing the same as that before the thawing, improve the quality of the forzen fod, and save energy, by precooling thinly the food to be frozen, sprinkling a liquid refrigerant at a specific temperature or below, and dipping the food to be frozen in the liquid refrigerant. CONSTITUTION:The shape and thickness of a food 3 to be frozen are limited to given values, and the food 3 is packaged in a synthetic resin film, etc. and deaerated. The packaged food 3 is then arranged at the starting end of a conveyor 1, passed between precooling headers 4 and 4 for sprinkling cold water, sprinlked and precooled with cooling water in a cooling apparatus 6 with cold water for precooling. The food 3 to be frozen is cooled to a temperature near the freezing point, passed between sprinkling headers 13 and 13 for sprinkling a freezing liquid, sprinlked and dipped in a refrigerant liquid cooled at <=-45 deg.C in a cooling apparatus 15 for freezing liquid refrigerant and frozen. The resultant frozen food 3 is then passed through a maximum ice crystal forming zone to reach the final freezing temperature. The frozen food 3 is then passed between fresh water sprinkling headers 16 and 16 for cleaning to wash the adhered liquid refrigerant for freezing.</p>
