PURPOSE:To facilitate the dehydration of fish meat after bleaching with water by mixing 1pt.wt. magnesium chloride and/or calcium chloride with 0.5-20pts.wt. sodium chloride to prepare the titled dehydrating assistant. CONSTITUTION:0.5-20pts.wt. sodium chloride is mixed into 1pt.wt. magnesium chloride and/or calcium chloride to prepare a powdery dehydrating assistant. At this time, water can be added to the mixture to prepare a liq. dehydrating assistant. Besides, <=about 10wt% alkaline substance selected from sodium bicarbonate, sodium carbonate, potassium carbonate, sodium citrate, and sodium acetate is appropriately incorporated into the dehydrating assistant. The dehydration of fish meat after bleaching with water can be improved by using the dehydrating assistant and the operation in the dehydrating stage is facilitated. |
