PURPOSE:To impart noodles with sweetness and deliciousness, without causing the softening of the texture, lowering of the dryability, and increase in calorific value, by adding a small amount of table salt and powdery Panax ginseng to hot water of a specific temperature, frothing the mixture, kneading raw material of noodles with the solution, and preparing noodle by a conventional method. CONSTITUTION:A small amount of table salt and powdery Panax ginseng are added to hot water of 30-40 deg.C, frothed, kneaded with raw material of noodles such as wheat flour to form a coarse noodle web, aged, rolled to a definite thickness, slit in the form of noodle strips, dried and cut to a definite length to obtain the objective noodles. |
