PURPOSE:To develop a letter or figure, etc. to the surface skin of fried bean curd, freely, without causing the peeling of the skin nor the bending of the bean curd, by applying a water-soluble coating liquid liable to be scorched compared with bean curd to the surface of drained bean curd in a pattern of the letter or figure, and frying the bean curd in a hot oil. CONSTITUTION:A bean curd cut to a proper size is drained under a weight, and a letter or figure is drawn to the surface with a water-soluble coating liquid. The liquid is an aqueous solution containing a component liable to be scorched compared with bean curd (e.g. aqueous solution of sugar, starch, albumen, yolk, etc.) or an aqueous solution having a concentration exhibiting higher scorching tendency. The bean curd is fried in hot oil by conventional means. |
