PURPOSE:To prepare cooked rice containing barley, having springiness and excellent taste and palatability, free from stickiness, by heating barley with saturated steam under pressure, adding the treated barley to rice, and cooking the mixture. CONSTITUTION:Barley is heated with saturated steam of 2-6kg/cm<2>G pressure for 30sec-20min without immersing in water before heating, and the pressure is released slowly to obtain pressure-cooked barley. The barley is optionally polished, and added to polished rice at a ratio of usually about 10-20wt%, and the mixture is washed with water, immersed in water, soaked with water, and cooked by conventional rice cooking method. |
