PURPOSE:Chicken bones are placed in a boiled water, then taken out, then pepper, sugar, SAKE, soysauce, chemical flavors and salt are added thereto give the titled coup stock which can give a kind of dish 'CHANKO NABE' of rich taste. CONSTITUTION:Chicken bones are placed in boiling water and heated with weak flame for 3-4hr to prepare a soup stock after removal of the bones. Then, 10 liters of the soup stock are combined with 100g of pepper, 50g of sugar, 360ml of SAKE, 360ml of soysauce, 30g of chemical flavors and 30g of salt, then then they are heated for about 10min to give the objective soup. |
