PURPOSE:Syrup or the like is fermented at low temperature using a catalyst which is prepared b immobilizing living cell bodies of a yeast to give the titled beverage stock suitable for refresh beverage, because of its low alcohol content and pleasant and strong fermentation flavors. CONSTITUTION:For example a syrup such as concentrated apple juice is cultured using an immobilized catalyst of living cells of a yeast such as Saccharomyces cerevisiae AHU-3054 strain (which is prepared b coating the cell bodies with polyacrylamide and immobilizing in a gel form), preferably in a substrate concentration of BriX20-40 deg., at a temperature -5-+15 deg., preferably 5-10 deg.C, for 5-70hr to give the objective beverage stock. |
